Mitutoyo any good ?
Yes, but probably overkill for home gamers. By all means get Mitutoyo if, like me, you love fine things which will last a lifetime, but I got away with Β£20 chinesium digital calipers for a decade before splashing out on the coolant-proof absolute digimatic #tartmode ones

A few people (including Xav) have suggested the Conti GP5000 has low RR and equally important low aero drag

how was there not an infringement law suit?
It's possible to purchase elements of a design, from basic drawings to a full technical package. Shimano are usually reluctant to do that, but not insurmountably so. On the other hand, it could just be convergent design, there's nothing there that wasn't already common on moto brakes before either Shimano or Grimeca got into bicycle dick breaks

my target power is 20% higher, and I am a lot smaller
That should make your split more even, so even narrower range. Obviously you need the chainring to match your expected speed and preferred cadence, but the point is that you're going to spend most of the time on only 4 or 5 sprockets, so try to put those evenly spaced either side of the neutral chainline.

With those tyre tracks evidencing a lengthy illegal drive on the footway, I'd probably go straight to the police. The pub isn't to blame, the GXO driver needs a call from the plod.
