Not haute horology but an option in your price range - a sort of two for the price of one [https://vario.sg/collections/versa-reversible-watch-quartz]

disc or rim? I have some ultegra 6870 Di2 rim shifters - but they are BNIB so won't be the cheapest you could get.
A couple of tips:
work out where your battery is going to be before you buy the cables so you can get the right lengths)
if your cables are going to slap around inside the frame (usually downtube) you can put zip ties along the cable which act to damp it
if you get second hand consider getting new hoods for the shifters - it makes it feel like a brand new bike...!

i've used p clips before and they work surprisingly well - otherwise you could use these:

Selling a lovely Bob Jackson Messina from 1997 I built up about a year ago, complete with paperwork / receipt from Bob Jackson with all details. Paintwork in good condition. Rides beautifully as expected from a 531c frame. Has rack and mudguard mounts so would make a great winter trainer or audax mile munching machine. I'm 183cm (long legs) and had it set up as shown - I would say it is equivalent to a 56cm.
I ran it with mudguards with 25mm tyres (close clearance on the front), and without guards could easily take 28mm and probably 30mm+ (see pics).
Specs:
Frame and forks - Reynolds 531 Competition with 753 seat and chainstays - 55cm seat tube CTC (56cm CTT) - 57cm top tube CTC
Chainset - Campagnolo Centaur red (compact 50-34)
Brakes - Campagnolo non-series skeleton brakes (athena level I believe)
Groupset - Campagnolo veloce (10 speed) except KMC X10 chain, 11-28 SRAM / Shimano cassette (can't remember which!), with JTEK shiftmate to make it work with campag, 'silver braided' jagwire cables / outers
Wheels - VGC Mavic Aksium - probably a few hundred miles at most
Tyres - 25mm Vittoria Pave with the green stripe - rear lots of tread left, front a bit more worn but still life left
Saddle - Selle Italia SLR flow - small tear to right hand corner
Seatpost - Whyte 27.2 - deserves something nicer
Stem - Cannondale (prob only 90mm)
Handlebars - FSA compact with cinelli cork tape nearly new, plus bar fly garmin mount (with go-pro adapter)
Headset - Condor 1 inch aheadsetPedals not included
Collection only from London SE13 (Hither Green) - one stop from London Bridge
£475

On tyre choice - worth saying a steel bike will ride far more comfortably than an alu race bike like a CAAD10 as the frame will be so much more compliant - so you might not need to go super wide on tyres.
Having said that these ridley forks look fairly wide - not long drop nor mudguards but fairly cheap...

mask off the metal and spray with black car paint and these would look good

I had one of these and honestly it still rates as one of the best riding bikes I've ever owned.
(BTW if you don't have one already I think the stem might be a 1 1/4 (rather than usual 1 1/8) - Ritchey do them as well as the canyon branded stems.)
