I did this a while ago on lo-pro-no-brakes bike, and I think it's very much doable in 24hrs but you can be bored to death on avenue verte and riding in Paris is awful for my taste.

I've got a new wheelset (thanks awesome @broken_777), so the old one for sale.

Fulcrums: 2 years old, quite light wheelset and awful stickers are removed (It took me a while). Front wheel in great conditions with new bearings installed and got one pair for spare. However, the rear has some bends (two unsuccessful bunny hops) - it was fixed at LBS and I hadn't any issues since then. I hope the price reflects that - £85. No skewers.

Pacenti: I've got something more fancy instead, so these never built and completely new. £35 for pair.

I am very tempted to get E3 Pro 2, but mainly because of superb taillight.

Have anyone got any experience with new Open Pro disc only rims? They look ace and light.

Please let me know if I am wrong.

I did Gravel Dash on CX with 32c tyres, so it's doable, however it will be much more comfortable and fun ride (especially on rocky downhills) if you are on 29er.

It also passes Puddletown Forest which has some nice MTB trails.
