Wallpaper paste has anti fungal stuff init, by which I mean it's a know place for mould to thrive, instantly I wouldn't blame the bathroom (getting one side of a wall a bit damp shouldn't really seep through). You're on the upper floor? windows look good (uPVC?) pattern on the original paper and the bother of over painting suggests its much older than 20years or forma rental, plaster however looks much newer..

need to final shape
I think I go the next stage of lazy,
Mix in metal bowl let flour soak up water mix have a sit down mix and when good turnout to oiled work top tighten into ball shape return to oiled metal bowl and cover with cling film.
Let prove to the distance from the bowl lip that I know to be good (it's over doubled in size) then cut out dough (with dough scraper*) flopping straight into oiled tin and bake in oven. * at this point the dough is so delicate I daren't try any mucking around.
Timings vary from time of year and quantity produced, but it can definitely work for a pm mix and am bake, recipe ~ do how you feel but
(starter 50:50 rye spelt mostly always make with equal water)
500 white
270 water
5 salt
230 starter -
