@bright I've never considered anything other than 26". The plan from the start was single or fixed. What I meant with "not much out there" is that I haven't seen 26" fixed/track rear wheelset ready to buy (apart from disc wheels). 28" you can find anywhere.
Disc wheel and velosolo cogs have been my primary choice because i can get the right chainline. and yes to RibMo!! -

The front fork will take v-brake, but the rear has different bosses. They are thicker and placed above the braking surface on the rim. Check the first photo.
But, I just came to an idea that could work. Road brakes with long reach. Something like Dia Compe 806. They have 75mm reach and that should be enough. I would have to place the rear caliper on the inside because of the bosses. I did some measuring and it should work fine and still look good. In this case, no struggling as i would just get regular 26" wheels and install the single speed kit on the rear hub. Fixed gear option would require building wheels on my own. -

I got this GT all terra tequesta frameset a few months back.
Paint was in bad shape and I decided to strip it to check if there was rust and give it a new paintjob.
It's a steel frameset made of triple butted Tange tubes. Built like a tank.
Dropouts perfect for SS or fixed project
So, the initial idea was SS or fixed. However, i wasn't paying attention to rear brake bosses and just later realized that I cannot mount v-brakes on.
I wanted to go SS with v-brakes for cleaner look but that's not an option anymore. The other option is fixed, or the least preferd coaster brake fun (but might not be able to achieve the adequate chainline due to chainstay clearences).Feel free to share some ideas!
