I have essentially no knowledge of technical specs or marketing goals, but my instinct would be that they have altered 105 for gravel and rebranded it, as a lot of people were already running 105 for off-road from a price point and reliability (as well as familiarity) factor. Customers created the market, Shimano saw the opportunity and demand, instead of spending a million pounds building from the ground up, just adapt a reliable base model, re-use parts and add branding... thusly GRX is born.
