With the Winter Bibs, anything above 10ºC and I find I'm uncomfortably melty.

Would have gone for a large but it's all good. I think the option of a slightly larger musette has everyone frothing because we've all been in that situation trying to stuff your coat or two more cans of beer in there amongst your repair kit essentials and maybe a pair of civvy daps.

Well, yes, prezactly.

I have essentially no knowledge of technical specs or marketing goals, but my instinct would be that they have altered 105 for gravel and rebranded it, as a lot of people were already running 105 for off-road from a price point and reliability (as well as familiarity) factor. Customers created the market, Shimano saw the opportunity and demand, instead of spending a million pounds building from the ground up, just adapt a reliable base model, re-use parts and add branding... thusly GRX is born.
