Whatever you do will reduce the life. Hypochlorite is an easy option - put it on, leave it and rain will do the work.
Pressure wash can be quicker with a big enough washer.

Best paying a professional valet?

I know I can’t

It’s a general clean. I have some water stains on the back seat. And various marks etc like makeup and chocolate. The car is old and the upholstery shows signs of wear but I don’t think spot cleaning will work as it will leave a clean spot on the seats.

Any hints on what upholstery cleaner is best?

Any advice about cleaning car seats without specialist equipment? I do not have a wet/dry hoover etc.

You will need to research ‘low cost’. Maybe additional training - others here can advise what’s available local to you.
I will say, your wife is right to be concerned but there are a few things that you can to to mitigate the risk.
I’m sure everyone here will have horror stories about blind car drivers - in town or outside of it. It can be scarey.
Saying that, I’m pondering a purchase (pipe dream?) and my wife is fine with it. I think she knows I am worth more dead than alive though!!

Are you related to my mechanic? He’s not an EGR fan either for all the reasons you have mentioned. I haven’t done an MOT yet so it will be interesting to see if I have problems with the lack of it. If it fails, I will have an annoying quandary - a new EGR costs more than the value of the car, that will have me thinking.
