I wouldnt take the risk because popping spokes all the time is really annoying. Especially on the driveside of the rear wheel. But if you are only 70kg and go bike packing it might be fine.

I would not recommend 1x for touring. XT is fine for touring.
I havent cycled there but plenty people cycled the carretera austral, plenty blogs and info about it. The wind can be your biggest enemy there...
