Also if you were to build the next one around a proper helmet that would make it easier to cover your ears I would think, and to get more ventilation, as it is all held a bit off your head.

Maybe you cant take corners as quickly as you have more (almost double) weight going down to the same sized contact patch?

If the holes are in the centre of the bar then the K-edge would put the Garmin off centre, as it is made to work with the clamp which sits to the side of the stem.

Who needs their eyes uncovered to cycle anyway?

I had one of their base level road frames as my main bike until recently. They are great bikes for the price, they far surpass anything else I have seen in terms of the level of kit they give you for your cash, and they are tough as old boots.

I cant comment on anything higher up their range, but my feeling would be that it becomes less and less worth it.

Sounds good! Road pedals definitely feel more stable and secure under power, so make sense for this kind of thing.
