Battling some spartan bowls of porridge this week.
I'm doing an "Ayavedic kitchari cleanse", and thus swapping ordinary lockdown vibes for a new monotony:
Breakfast: Porridge
Lunch: Lentil curry
Dinner: Lentil curry
Snacks (only if desperate): SeedsNo caffeine or sugar in anything all week, except an apple if I'm desperate. Very interesting to see how you fare without those spikes.
This morning's porridge is great though! I think the trace levels of sugar in the ginger are really revving my engine.

- Turmeric (little)

I'm also looking for a ratty Rolls to practice re-covering. I will happily take one with terrible leather. North/East London ideally. I will get in line behind @smackerjack.

Using a whole cassette is a good shout. Maybe the next step up would be to use just use three of the cassette sprockets. Chain would sit on the middle one and be blocked on both sides.
I'm thinking that a more permanent alternative might be to find a NOS red Mavic Open Pro rim and build a dedicated SS rear wheel. The more I think about this the more I like the idea of having a SS permanently.

My one remaining stumbling block is the 8 speed Athena rear hub. My freehub pattern is either original Camagnolo 8 speed (left) or Exa-Drive Campagnolo 8 Speed (right).

VeloSolo don't list a Campagnolo cog. Other suppliers seem to have 9/10 speed cogs but not 8 speed.
If I'm anal about chain tension will I get away with using a cassette sprocket? I could always while away an hour filing down any ramps. Can't do so much about the shaped teeth though.

If I wanted to temporarily convert this bike to SS, could I simply:
- Remove derailleurs, shifters etc
- Replace 7 of the 8 sprockets with spacers
- Shorten chain
- Cycle on my merry way?
I like the red rims too much to use different wheels, which I'm sure would be the cleaner solution. For a SS conversion is it kosher to use QR skewers in horizontal dropouts or do I need a track axle and track nuts?

No worries, but it looks like @gertrudestein has pointed out that the levers I linked aren't actually the best ones for your front derailleur! You need to find a non-QS lever ideally.

Another thought:
If you have broken two gear levers then something is probably going wrong. I think either you have cables that are very old and difficult to shift, or you like to shift really hard with alarmingly strong fingers, or your rear derailleur is set up with a limit screw screwed in too much and this is creating a hard stop that you are trying to shift past to reach the easiest gear. Pushing against that limit really hard could break the gear lever.Anyway, when you mount the replacements just use new shifter inner and outer cable if possible, and get someone to check your rear derailleur limit screws.

Shimano shifters will not work with the rest of your bike, as you have Campagnolo derailleurs. Shimano shifters will pull a different length of cable through the shifter with each click and this will leave your chain between the cassette cogs rather than directly over the top.
I suggest searching for Campagnolo Veloce 10 speed shifters which have the same shape as your current levers, i.e. these: https://www.ebay.co.uk/itm/Campagnolo-veloce-10-speed-shifters/133684797351?hash=item1f203c1fa7:g:NKEAAOSwey5gQ9xE

Campagnolo 10 speed has gone through multiple generations and not all 10 speed components will work with each other. The levers above will definitely work, and you can perhaps source some on this very forum.
Just to point out... Below are Campagnolo 10 speed shifters of a later generation (still 10 speed though). I am not sure if they would work with your earlier 10 speed derailleurs. I suspect they might not. Someone else here might chime in to advise on that.

Does anyone have a broken 20" wheel kids bike they need to get rid of? I can use some parts to make a bike trailer. I don't want to cut up a working bike! Something like this:
