well. i did not recommend it as it is your first project. and it is alu. but the vitus bonded alu frames were a lot flexier than welded ones, that is why they are as comfortable as a steel frame. but i still wouldn't do it. you have the possibility to use what you have properly so i think you should go with the 7sp system.
you can UPgrade to any RD. just don't go back in time - the thing about this is the following: 120mm rear spacing was for 5speed. then came the 126mm spacing up to 7speed. now there is 130 and 135. it doesn't matter what RD you use as long as it came with a hub (in the same groupset) that used 126. it's not the speeds that matter but the spacig - if you think about it, the 6 speed block and the 7 speed block used the same amount of space in width but with different spacers. so the top and the bottom of the range was in the same place. there were only mire sprockets in between.
chain width comes from the same thing: if you had more sprockets in the same amount of space, they had to be closer together so the chain had to be narrower so it didn't come in contact with the surrounding sprockets.
get a pair of shifters with cable stops, and you are good to go :)

why wouldn't they? :) all the levers do is pull the cable. what derails the chain doesn't matter as long as it's got the paralelogram to cover the whole casette range.
the higher the number is in the shimano lineup, the better the quality. EDIT: sora-level quality is also good - they won't brake in half. what i'm trying to say is the higher level components don't use as many plastic parts and are lighter. i'd say go with sora and not only because it is 3300 vs the tourney (that is for touring if i'm not mistaken) but because i had them and i can tell you they worked fine.
many on here would say that the thumb operated downshift is not good (well, comparing to campagnolo it isn't as you cannot reach the button from the drops) but then again sora is not for competing. you'll be riding on the hoods most of the time and from there sora is really smooth

adjust the bars and lose the chain - otherwise a really nice daily. the other projects are looking good too! what's the hubs in the wheelset of the mielec?
don't know if others agree with me but i'd suggest opening separate threads (well, not for the vitus as it is finished already) as the other two projects seem interesting enough on their own. you could also track progress/keep record of them and discussion wouldn't be messy with a big all-in-one thread.

you only need 8 speeds for the rear. crankset is fine. 7 was the minimum to be compatible with sti but it is a rare system. 8sp sti basically grows on trees everywhere - a pair of 6400 ultegras will do the job.
rear wheel with 8speed casette (watch out for dropout spacing: 8speed uses 130mm whereas 7 goes with 126. it is possible to use 130 in 126 but only in steel frames. wouldn't suggest on alu. if i recall correctly, vitus 979 had both versions) a rear derailleur with a compatible paralelogram-range and a pair of sti's is what you need :)

cute :) important question: does she sniff the new frames you take home? mine - apart from boxes and bags, obviously - seems to like bikes in particular
edit: i mean, is this a general cat idiocracy or is it just mine? (brings the thrown ball back and sometimes insists on playing fetch, so might be faulty. or a dog. doesn't look like one, though)
