Yours is a lot neater than mine! I was very disappointed I could only find skin-off whole belly, my fault for not being more organised.
My FiL just got a slicing machine, looking forward to getting this on there after Christmas, nothing better than a couple of slices of porchetta pan fried and thrown in a sandwich. Nom.

I had mine for 11 years, lost it last year. Replaced it with an insulated version and very happy with it although their sports cap still needs refining, they're on version 3 but it still leaks!
Also got a KK insulated coffee cup with the leak proof lid, very good but lives in the cupboard mostly. I use a large Yeti insulated cup/mug as my daily coffee receptacle, I make my coffee at 7am and it's still hot a couple of hours later, can't argue with that.

Bought a 4kg skinless and boneless pork belly, I then had a hard time finding pork rind. The rind came from a hipster butcher, it cost more per kg than the pork belly did. Just made the marinade up, will assemble tomorrow.
Haven't cooked a porchetta for ages, gonna do a long, slow cook in the Weber overnight then go with the hot oil method to crisp up the skin. Let's see how we go. Disaster beckons! π¬

Includes some interesting stuff on transmission which I'd never heard before. Have any papers been published on how covid spread?
Dr Craig asserts close contact isn't the primary form of transmission, that the virus is airborne and can travel great distances infecting people as it disperses in the atmosphere. The story about the Argentinian fishing boat is very strange.
And lots of stuff about closed thinking in the medical profession and an unwillingness to listen to new ideas about how the virus spread.

Oh man, I did look at them as well as Asics, Saucony, Adidas, etc, we've got a big outlet near us and all the big running shoe companies are there. I went with NB at first which did the job with custom insoles but they made me feel like such a (gran)dad. Plantar fasciitis is no joke, brev!
I'm just a massive Nike slut but I do really like that Shadow 3000 colourway.
