@Dammit what part of Americaland are you lost in? I don't recall many parts that I visited that are gastronomic wastelands. Even in Alaska I found good eating.

Did the 08:00 Saturday "intermediate" SQT whatever that means. It was early, but the frost that morning meant I was glad to be riding indoors. Warmup in pairs on the blue, then into a paceline for half lap changes. Two Italian pursuit races, then Sean's game (with most people not watching for the train and just rolling around the top) and finished with a 15 lap devil. Riding in 15 minute blocks meant by the time you were getting warm it was time to come off the track.

I did an FTP test at Elite Cycling in Crystal Palace (Paul Mill) and from that we derived training HR zones (never done a VO2 max). It's basically an hour long session built around a 20 minute TT/ramp test with a Powertap wheel on a turbo trainer. Basically did the job for £50 I think it was. Paul coaches some of the people I know at Herne Hill, which is how I found him. I would go back/set up something more regular/structured if I weren't so lazy.

Where are you riding? IIRC at Lee Valley they don't allow computers on the bars in any circumstances, you could maybe place one under the saddle rails. I think @danstuff did that on the forum track day? Even then I am not sure it's allowed.
I know at Herne Hill lots of people have phones, Garmins, etc in jersey pockets collecting data
