You can still get post mount pads yes, but why use retro technology when there are easier and better ways to do things.
Also due to the design of two parallel plates making up the caliper they have a tendency to squeak due to the vibration. Yes, single piece cast/machined caliper squeak but the tolerances are bigger so the pad doesn't have to be positioned 100% accurate which will then change as the pad wears.

Hats, what's your thinking on returning it on Sunday? If it's a case of not wanting to drive through rush hour on a Monday etc., could you drop it off on the Sunday anyway, then ride up to the hire place on Monday to drop off the keys?
Do this. I managed to sort out an agreement with my local place that I could just post the keys through the door. They're not actually supposed to do it but they were nice people and for some reason they thought they could trust me.

How difficult are Shimano 600 headsets to replace? I remember hearing about them being rather low stack so people kept finding that the steerer was too short to use on 90% of other headsets.
My crown race is cracked so it's going to need replacing soon. What are the chances that I'd be able to find a replacement crown race and just swap the bearings?

Never use the crappy ring supplied with the inner tube. It's a pointless bit of turd that only complicates matters.
Specialized tubes are known for splitting on the seams. Conti/Swchalbe/Michelin tubes are good. Bontrager are a bit unreliable in my experience.
