Just read that you can use 11sp R7000 cassette on a 10sp wheel. How does that work? I thought the 11sp spacing between cogs was narrower than 10sp. Does that mean Dura-ace R9000/9100 and Ultegra R8000 aren't going to be compatible with R7000?

Evanscycles is great for testing. If there's anything in their catalogue you like the look of, then let them know, pay a deposit and they'll bring it into store and assemble. If you don't want it then you get your deposit back.
I once had a Felt Brougham and it was really good. Cromoly 4130 steel frame isn't a lightweight (read: thin) steel, it's tough and strong. It didn't feel too heavy when i rode it, and had a nice thrum on London roads.
