I used asdatyres for 4 tyres on my fiesta before christmas. They just have them sent to a local fitting centre, in my case a halfords autocentre. Pick a day / time for fitment & bring the car along to them. Totally straightforward and comfortably the cheapest.

Some older Reynolds assault or Ritchey WCS apex wheels would probably fit, or possibly any carbon wheels from 6 or 7+ years ago. Keep your eye on ebay or put a wanted ad on here.

Yes newer wide rims will definitely make the tyres fit wider so your choice is limited.

Yes as withered_preacher said. Some fork steerer tubes are tapered inside and won't allow the stem to go all the way down, I had a concorde previously that was like this.

You might possibly get away without changing the cassette if fitting a new chain, but it could also slip like a bugger, give it a try. I always think athena and centaur are of a similar level quality and those cassettes seem to start at around £60 on ebay.

53/39 rings wont fit on your current chainset as it is a compact. If your chainset is power torque and you haven't got the right tools to remove it, get a shop to do it. Ultra torque much better design for the home mechanic.
