Finally decided I should buy an MTB and managed to pick up a San Quentin 3 frameset a little while back.
Bikediscount.de had some cheap Manitou Mattoc's and picked up some of their wheels - deore centrelock hubs and ryde 30mm internal rims.
other bits mostly acquired cheap and secondhand - mt500 brakes, xt 11 speed drivetrain borrowed of my other half's commuter as we are off to the Brecons and I wanted to have it built before we go this weekend.
Dropper post is a brand-x ascend 150mm drop - first time using a dropper, my two boys think its hilarious... after a low stack saddle as it's a tiny bit high at max insertion and its currently running a stripped fake ISM, which is a little incongruous.

In need of the following MTB bits - not after anything fancy, as just trying to get this put together cheap(ish)
11 Speed rear mech and cassette
170mm or shorter cranks - either boost or direct mount and 24mm axle
650b tubeless tyres - ideally 2.6
30.9 dropper post

I think retention of the grounds is still an issue - so better to weigh the output.
My thinking being - beans in the hopper, weigh/zero portafilter -> turn on grinder and grind into portafilter directly (with funnel maybe) then turn off when you think it looks about right and weigh it to see where you dose is then grind a bit more if necessary.That's pretty much what I did with my old MC2 - as the grind timer was pretty useless, so I just set it to max and turned it off when done.

I used to use polyester sailthread for my bags - https://shop.solentsew.co.uk/thread/bonded-polyester.html (nylon soaks up water and then stretches much more than polyester)
Depending on the machine you might get away with V92. V69 should be fine for domestic machines generally. https://www.sailrite.com/Selecting-the-Right-Thread-Size#:~:text=V%2D69%20is%20the%20heaviest,of%20thread%20on%20the%20spool.

Reach is fine, but seat tube could be a little shorter tbh.
