He doesn't temper the chocolate?
He is probably using Valrhona 70% (just the best!) which can take it like the best of them.
But i have found tempering the chocolate gives it a better finish and makes it stronger for shapes, also takes longer to melt.i go with flavourless oil as it doesn't leave any creases, also chilling the mould first helps it set quicker

Dortmund fans were the best visitors we've had since that east european mob from a few seasons back who were still singing when the seventh goal went in. They are a bit organised for my liking, and got to wonder about those doughnuts that travel all that way to sit with their backs to the game conducting the singing, but as a spectacle it works.
Yeah, RVP appears to be carrying the team but he's in such form he'd give that impression whatever team he played in. The first goal was Song's, tho it's no accident that RVP is in the right place for the tap in. The second goal was entirely made by RVP's movement, he fooled their entire defence and just stepped back into clear space, looks so simple but he does it time and again.
Gervinho should have had one but he was given time to think, which is something he's just no good at. He's like Adebayor that way, naturally very talented, just not very clever, tho hopefully he won't turn out to be a massive cunt too.
needs to sort that hair out though.
Adebayor and Gervinho are both Wenger type players, Athletic.. neither is gifted but they are always in the mix. Gervinho desperately needs a goal, at the moment him and Theo both check for RVP as he is the form player, it's just a matter of them both hitting form.In place of RVP we need Park to show he can finish at this level, he has a knack of finding the space and is a smart player. the next big step is goals from the middle, Ramsey, Arteta, Rosicky and Arshavin all need to be in the goals if we are to stand a chance - i can only see one of them doing that

that run from the top right half of the field to cover Santos, then make the tackle, then round the player and put a lovely little chip ball back down the line to start the attack.. then get back up into the middle to support it.. IMMENSE!
I am still shocked he has his critics, rumour is Barca are after him not, as the papers say, Theo.nice to see our shape in the second half as Song pushed up, RVP drifted in and out from wide and Ramsey started to click with Arteta and controlled the game, a great result given how good Dortmund are, their movement and pressure in the first half was the best i have seen against us
nice to have a gimme next in europe now we are top, fixture list gets busy then. time to rest a few players against Fulham and put a full strength side out against Shitty, test the set up.
The Dortmund fans were an orchestrated army!! that whole slow drum thing and group clap... amazing! then "sing when your winning" after the stadium lit up when RVP was in the right place and going deadly quiet when we broke into song, swiftly followed by an almighty german chorus.. then at the end the sea of scarfs.. just a great sight and their team really appreciated it staying late at the end to applaud them and throw in their shirts. very impressive

Ai.. cooking slow but don't forget to blacken the ass off it in the pan at a high heat to start with - maillard etc, then cover and slow cook till tender.. then remove the meat and skim of SOME of the fat but put the strained juices back in to reduce down - the fat liaises with the juices to form an emulsion. turns piss into a coating sauce.
then and only then poor it back over the meat. it should coat it and coat it well
