Kenda kwik-track iron cap are pretty sold, 32c I think. My mrs uses them on her commuter and hasn't had a puncture in about 6 months and she seems to ride through more glass than anyone. It's like she's doing it on purpose. Saying that she's no where as heavy as you.
I've got a couple of friends in the Mid-West who use them as an early and late winter tyre (they have to use treaded/studded tyres for proper winter), which I think s a pretty good endorsement.

the only one I've managed to find are those Spes 175mm wide one that just about cover my sitbones, but the front end is too thick and rub against my legs.
perhaps you could look into stripping one of these and then having the front end sanded down (or something like that) to narrow it and then recovering? not sure if the rails are spaced further at the nose of these saddles, but might be worth thinking about as it could be quite easy to do.

you can stick a freewheel on a fuji track and fit brakes, no problem. it doesn't have cable stop braze ons, but you can use clip ons. I think the classic is the same, not sure though.
I'd imagine that the steel and normal langsters feel pretty different to ride, so you're doing the right thing trying both.
are you limited to where you can get a bike (cyclescheme or something)? if not you've got quite a few other options you can consider...

been thinking more and more about it recently, but haven't really bothered with any proper research yet as finances do not really allow at the moment. Saying that, I'm sure i saw a sturmy archer 8 speed hub that was 120mm OLD online somewhere whilst I should have been working. would be interested in seeing a steamroller set up this way.
