Its a 2mm sheet of metal. But its going to be an unusual shape (obviously).

Can the jig go in strange directions?

2mm will be fine. Will do wiggly shapes, but might be better to do a first cut with jigsaw and then finish with dremel/hand file.

I have to cut out and shape track dropout inserts out of stainless steel sheet metal.

I've got a jigsaw, that will cut up to 5 or 6mm steel (with appropriate blade).
