I've ridden to the Hook of Holland from Dunkirk using much of the North Sea route which is good fun as it includes ferries, bridges, dykes, canals and island hopping.
Have posted the route here before, will see if I can find it.
And yes IMO very doable.

Agreed, it was a lovely morning to cycle commute into London although some riders seemed to be overdressed for the weather (yes, I appreciate many Londoners come from warmer climes than here).
The only shock was the level of traffic as its the first time since October 21 that I have cycle commuted on a day other than Friday which still has that eery pandemic feel.

as if you didn't have enough options here's my route. All doable on a gravel bike.

takes in Ranmore Common, Leith, Holmbury & Pitch Hill, Cranleigh onto Downs Link and then up and over the aptly named Fulking Hill and Devil's Dyke
EDIT: and here's the obligatory video so you can see what the terrain is like. Me and one buddy were on our 26" MTB but only cos I didn't own a gravel bike last time I rode this route.

You could try ringing around the various bike tour or chalet hire companies in Morzine as they often have a bike or two they are willing to hire out e. g. https://www.mtbbeds.com/resorts/morzine-mountain-biking-holiday
