Yes, the hg700 does require a spacer much to my surprise!

£31 later and we have brakes!
Need to get a connector and more hose for the rear and probably trim the front but that’s not required yet!
Acetone in the post for the handlebar graphics and hopefully a stem soon.
May think about tyres, front bb and cranks next week.
Dropping off the front wheel tomorrow too

The rest are just fancy
Cheaper ones from companies such as ace tend to fall apart quite quickly

Shouldn’t cause too much issue, the bag will move with the bars / hoses so won’t be chaffing back and forth etc, a shimano brake with shorter cylinder etc might allow more clearance but I wouldn’t worry too much
