Haven't bought from them myself but Tout Terrain is a well regarded company here in Germany! They're located only a couple of miles away from me. I'm pretty sure, their website and offerings are not a scam! Maybe ask them about the price and details first before damaging/tarnishing their reputation...

I'm more into the silver chainring as well!
Just like @ojwithbits I'm interested in the rims that Martin used for that wheelset. First I thought Pacenti Forza but the rims ^ seem to be sleeved so maybe Velocity Quill because of the round profile?

This hub might fit the WI one in terms of hub design and amount of "rattyness". :D

Edit: I'm all for chopping. It's your bike, go for it. :-) Been meaning to do the same to mine for a while. Just don't have the time right now to bring it to the powder coater, etc.

Frame looks great! The color really pops after the polish. :-)
About the bottom bracket: not wanting to talk badly about your lbs but they've done quite a poor job with facing and chasing. The bb shell face is not supposed to be full of chatter marks afterwards but smooth and shiny. Guess their cutter was already blunt or the tool has got a lot of play, etc.
I hope the bottom bracket went in smoothly and sits straight anyway!

Does exactly what it says on the tin...
