This hub might fit the WI one in terms of hub design and amount of "rattyness". :D

Edit: I'm all for chopping. It's your bike, go for it. :-) Been meaning to do the same to mine for a while. Just don't have the time right now to bring it to the powder coater, etc.

Frame looks great! The color really pops after the polish. :-)
About the bottom bracket: not wanting to talk badly about your lbs but they've done quite a poor job with facing and chasing. The bb shell face is not supposed to be full of chatter marks afterwards but smooth and shiny. Guess their cutter was already blunt or the tool has got a lot of play, etc.
I hope the bottom bracket went in smoothly and sits straight anyway!

Maybe give this new-ish Pirelli a try?
https://www.bicyclerollingresistance.com/road-bike-reviews/pirelli-p-zero-race-tlr-28
Got very good results in the test lab, slightly better than the Corsa Controls and Strada Pro HTLRs in terms of rolling resistance and puncture protection. How/if that transfers to the real world I don't know....

The difference between Shimano ROAD and MTB bottom brackets is the length of the threaded portion, the sealing and the width of the "outboard" part. MTB bbs are a little bit thinner.
MTB 10.3 mm vs 11.3 mm ROAD.
If you put a 1 mm spacer on each side you can just use the MTB bb cups with your ROAD crankset. :-)

I'd go EEWings with a black spider and black chainring. Ratio narrow wide or SRAM Force 1x ring (all black or black and silver) would be my pick.
If you prefer a direct mount chainring how about this one?

This Rivendell article talks about the pull ratio of the new CUES stuff being 1:1.
https://us7.campaign-archive.com/?u=ad1569fa93a2ab2374ead2fde&id=8ec2759e52Which means that Shimano CUES should be compatible with SRAM Exact Actuaction (also 1:1) components. I don't like the shifter feel of my rival derailleur with an XO flat bar shifter and thought about changing the whole drivetrain to GRX. With CUES I "should" be able to buy a CUES shifter and keep the rest of the SRAM drivetrain. :-)

Who's going to give it a try? :D

I'm more into the silver chainring as well!
Just like @ojwithbits I'm interested in the rims that Martin used for that wheelset. First I thought Pacenti Forza but the rims ^ seem to be sleeved so maybe Velocity Quill because of the round profile?
