Only tyres you need for a bike like that are Continental Contact Urban. Roll really nice and I have yet to puncture on three different sets - including the cargo.

Just get Stokke Trip Traps for the adults as well. Real comfy!

Ergon GA3 are the only grips I can use with flat bars.
After that I'd try some bars with more sweep like @GideonPARANOID suggested.

Friction shifting?

I found riding a moustache bar to be similar to riding on the hoods of a drop bar.
You might need to adjust the stem length though.
And consider angling the ends down.
