We bought counter stools for our island. The height is between 600-640 mm from memory - like @dbr says
Bar stools are much too high to fit under a kitchen worktop. -

Last night I listened to Shut Up and Build Bikes podcast, where they interviewed Rob English - He mentions that a very stiff tandem can lead to discomfort, for the stoker especially, because the bike doesn't follow the movements of the body. Thus he designs his to allow for more flex, which leads to more stoker comfort.
It is a very interesting listen. -

Granted, they are not supple road tyres - but compared to most other commuter/touring tyres they are generally much lighter, the wet grip is outstanding and puncture resistance is very good ime. Also e-bike rated for 50km/h, and with a rated load between 85-135 kg/tyre, which means they work for cargo and tandem applications as well.
Grand Prix Urbans are excellent tyres as well - but does only come in 622x35mm
tl;dr - as an every day cyclist (not training, nor racing) I have yet to find a better tyre.
(though I would like a lugged winter version that comes in 406x50 and 559x50) -

I've been through this feeling a couple of times.
Maybe find a cheap set of wildly different handlebars to try on it.. Or treat it to a set of really nice tyres?I've found my preference for handling and steering feel depends greatly on handlebars and road feel, and I've recently fallen back into liking on of my bikes when I put a set of Ritchey Kyote handlebars on it.

You could get a sheet metal nibbler to use with a cord(less) drill.

Or you could use a diamond blade for a small scroll saw.

Agreed - I have a pair that I found in the woods with a discarded toolbox, when I was 11-12 years old - in retrospect it was probably the discarded remnants of a burglary, but I still have the pliers wrench and I use it almost every time I'm working on bikes.
re: adjustable cone spanners, I've seen some that have the edges ground down. Edit: Dave Rome wrote an article about them in 2023

My only gripe with the ENO ECC hub is that you're you have to use thread on freewheel, which I've found to be either poor quality or cost a lot of money.
