You'd have to live somewhere without ANY inclines to get away with a singlespeed Nihola imo - even if it does come with 250w of assistance.
I had no problem picking up the inside wheel on a fully loaded postal Nihola going around corners (~100kg rider + 50-60kg of mail in the front), so tipping might a concern still.
On the contrary I've never felt like I was tipping over on our Bullitt.
Black Iron Horse might be the best option. -

Fyi our eldest was 9 months when she first had a go in the Yepp Maxi.
Couldn't ride for long though, as she would fall asleep when she got bored after 20-30 minutes.We do have a Croozer Kid 2, that we use to take our 2-year-old and 2-month old out together instead of a pram/buggy. Little one sleeps like a log in the infant sling!

We've used a yepp maxiwith the seatpost bracket extensively. It's a very nice bit of kit, but carrying a 16 kg child on the rear really offsets the center of gravity. I'm not to keen to try it at the 25 kg weight limit - which is one of the reasons we bought a Bullitt and I'm looking at a MacRide seat for the eldest.

Sounds great! Thanks for the reply. I'm really impressed with them in 650x42 flavour. The roundest cheap tyre I've ever seen.
I'm looking forward to see if they feel different to the 40mm marathons on the bullitt currently.edit: the picture is not mine, but the bike that made me look into them for the bullitt.

Current Disc Truckers are wildly different. 26" models form 42 to 56 and 700c from 56 and upwards.
Head tube angles are also 1 degree slacker on the 26" from a cursory glance. -
Sharpness is overrated anyway. It looks like a really fun bike!
