I'm quite geeky about cooking stuff, and few years back (after reading this thread), convinced myself that what I really wanted was a hand made Japanese knife - bought as a present to myself a Ryky Tran Gyuto - clad carbon steel, trad Japanese handle. It was discounted as the handle had a slight scratch on it (but still twice the price of any other knife I've bought).

anyway - i hardly ever use it. It sits in a drawer and every now and then I prep some veg with it, wipe it down and put it away again. I just can't get used to it as an everyday knife.
So I'd be tempted by the Wustoff / Henckells / Zwilling route - a couple of these are what I use every day.

James Gourmet Chapin.
Not one for fans of lighter roasts. Tried it as a macchiato and an espresso. Preferred as a milk drink.
It's on the way to a traditional Italian espresso, earthy and a touch bitter, with lemony acidity.
I could probably dial it in slightly better to reduce the bitterness.
Overall, worth trying if you like a fairly traditional espresso profile. It isn't really for me to be honest.
Happy to continue my impromptu bean swap scheme of anyone fancies trying it.

one of our cats caught a fledgling robin. i'm a bit distraught.
i realise that i have to accept this as being a consequence of having cats that are allowed out. it's still upsetting.
they are not generally big hunters and we don't have a cat flap so mostly they are indoors, and mostly they catch mice when they catch anything.
it's all very irrational on my part.

without the ACC deciding it needs to slow me down to the truck speed
This only happens in my car when undertaking a slower vehicle in the lane to the right. Slower vehicles in the left hand lane just get breezed past. Not sure if that's what you mean?
obvs would be the other way around in France and I guess ACC on a UK car would be a bit of a pita in this circumstance, I wonder if it's configurable?
