My partner has a Hunt Supadura dynamo wheelset that is on its third warrantee rear rim (cracks). The first two rims were built by them.
Most of our bikes have dynohubs and you could build them with deep rims but check spoke count. Most dynos have lots. Maybe cross one or two. Radial spoking theoretically isn’t a good choice.

My expectation is that on the track, it would possibly have been raced on 700C tubs and used 590 wired-ons on the road. Tubs were available in all sorts of sizes for a while e.g. Constrictor

Offset brake pads might be an appropriate solution.

The vast majority of bottle dynamos are cheap and nasty and won’t hold up in intensive service. The exceptions are expensive and fairly rare.
Are you aiming to run the bottle dynamo on the tyre or the rim? Slipping in wet weather can be an issue.
Most front mudguards are too flexible to support a front light without fracturing from fatigue.
Take account of those issues and you will have a reliable system.

I broke tib/ fib on one leg and femur on the other when a car drove over both legs. Nails were put down both the tib and femur and are still there. I spent six weeks in hospital and six months in a lower leg cast because of slow bone regrowth.
I rode a 200km brevet a year after the crash and have finished 6 x PBP and lots of other long brevets since then. The only significant issues have come from nerve damage caused by the crash. The bone issues have been pretty trivial, other than requiring readjusting cleat angle and saddle height.
Don’t be surprised if there is a small leg length difference now. That is fairly easy to compensate for, if you are aware of the possibility.

The 3N70 and 3N71 tended to crack their cones early (too thin) while the 3N80 worked like a dream for ages. I don’t know whether the 2N70 used the same cone design as the 3N70.
