Already had a shimano 105 (1050) 7-speed groupset in excellent condition and other parts that fit, except the wheelset. I don't want and don't need more than 7 gears. found some brand new Fulcrum 6.5 CEX (actually it's fulcrum 7) and got them for a nice price, got the spacer and installed the 7-speed cassette 12-28. I will run one chainring on the front, 42t, so it's a nice ratio.
Thomson, salsa, stripped flite, risers... It'll be a fun bike to ride around... -

@HHC - yes, 700c wheels fit in the rear, no problem. Just the front fork won't accept anything more than 700x25.
This guy made a conversion with bigger wheels. Can't tell if 700c or 650c. Probably 650c

@adrevporn the paint is car lacquer, nice and thin, done by a pro, so no problem with brake bosses.
I'm going fixed with front v brake. I have a pair of Avid Single Digit 7. Should be ok. Rear wheel will be mavic rim with XT 756 hub and I will use disc cogs. It will give me the perfect chainline with the crankset and BB that I already have. I will just change the axle for a longer and solid one and use track nuts instead of QR.
Due to chainstays and clearances, there is no other option than to go with hubs that give 50+ mm chainline. Especially with bigger chainrings. I have a 45t one. -
