Thank you everyone! This is really helpful.
Also had this response back from Andy at CycleFiesta.com:
Regarding cycling in the Sevilla region, there are a few possibilities, but it is quite difficult to get to the mountainous areas from Seville, unless you have your own car, or are prepared to travel for several hours by bus/train.
If you would like somewhere mountainous, then Ronda is the best location. It is situated between the cities of Seville and Malaga and has two mountain ranges on its doorstep. There are several beautiful climbs here over 1,000m, and the town itself is historic and very interesting. The only problem is that it is quite difficult to get to from Hacienda de San Rafael unless you have a car. The train does go there, but you would have to catch it from Cordoba, as there is no direct line from Seville.
The other option would be to stay in one of the towns to the east of Sevilla (Carmona/Ecija). These are beautiful towns and easily accessible but the area is flat, unless you are prepared to do long circular routes to the north (120km+). It is also very hot here in September.
The area to the south-west of Sevilla is a National Park (Donana), but it is no good for cycling, as it is almost entirely marshland, with very few roads going through. To the north of Seville, there are some mountains, but to get there you have to cycle through some quite boring areas and also some roads which can be quite busy. Likewise, the entire south coast is very busy in September, so I'd recommend trying to stay somewhere inland.

You're welcome.
Might want to consider moving this thread here
How do I do that? :/

I can't see any previous posts specific to cycling in this area of Spain, so here goes a new thread.
I'm heading to a wedding just outside of Seville in September (last weekend of La Vuelta in fact) and thinking of extending my stay and getting some sunny miles in. Has anyone stayed and cycled in this region before? Can you recommend places to stay which has good cycling routes and a decent village/town for eating out in the evenings etc?
I'm not interested in organised tours etc - ideally I want to hire a villa (and invite some friends) and arrange our own rides.
Any recommendations and advice would be appreciated. Thanks!
