Finished the sweet fixie.
I found out it was 1 of 80 frames made for a cycling club and used as rental bikes, this one is from 2008.
The frame doesn't have much 'chainring clearance' and the 46t ring was nearly toughing the chainstay. I use a Shimano ht2 BB on this and solved this by using a MTB BB of which the cups are 1mm narrower and using one spacer on the ds.

Even same brand tyres won't necessarily be the same size

Very true I already experienced this with Conti mtb tyres and Schwalbe road tyres. Also Conti gp4000 was wider than the newer gp5000 (in the same sizes).
Best thing to do if you want to be sure is trying to find someone with exactly the tyres you're after and ask and also ask their rim width

Looks pretty good too, better than the original Shimano rings.

That tiny little notch is better to do by hand anyways. With an angle grinder it's too uncontrolled.
Note; I think it's a stupid idea to do this and mess with your own safety.

Stunning bike

Maybe leave the rear tyre and get the same up front in 37c. The rear will wear out quicker so you can use it as spare.

Why do you want 40c in there so badly anyways? Get some 35 or 37c, problem solved

This sounds like a GXP BB being used with a HT2 crank.

How does it handle? Like a real touring bike/ tank or still a bit playful?
I really like the look of the frames.

Because of the adapter there is no step anymore, it's basically a straight 24mm spindle. So the axial loads are now shared between the 2 bearings, like with Shimano cranks.
And apparently the bearing quality of Shimano is better too.
