You could find Spain and Portugal pretty hot in June/July but then I'm not a great fan in the blazing sun.
Alternative route would be along the Atlantic Coast but then you miss out Central Europe.
Definitely ensure phone is unlocked and look into getting a local SIM card as having internet access generally makes life much easier.
Most places don't officially allow wild camping but I've never had a problem with it (just don't be too blatant about it).
You should be in for a treat whatever you do

Finished a short but sweet ride over the Atlas Mountains riding from Marrakech to Agadir... considered riding on to Essaouira but temperatures on final day had me happy to call it a day.
Late start on first day with rather mixed weather including a hail storm. Not necessarily a bad thing as temperature as less problems with overheating although had issues with temperature regulation regularly going from hot to cold. Finished up just south of Ouirgane in an amazing wild camping spot.
Next day saw more climbing and I was grateful for my triple as I summited. Amazing views on the up and down. Descent was glorious and definitely got the impression that it would be better going south rather than north. The next day was a bit more of a slog along a relatively flat road to Agadir - probably not helped by the weather which had me feeling like I was melting
Roads are I'm pretty good Nick except near the summit where presumably the winter gives the roads a good kicking.
Locals are exceedingly friendly, one of the friendliest places I've been to. Probably not so great for vegetarians.
