They help to an extent at the start but have issues.
They don't account for non straight edges where you need to lift the blade (anything other than a nakiri or very flat cleavers etc)
They don't account for a difference in blade thickness. Look at a blades with a strong distal taper like blacksmiths from the Sanjo region or most western handmade blades.
They don't account for blade height. If I'm happy with the angle on my 110mm tall Moritaka cleaver, my 150mm petty would fail even sharpening to achieve the same results on all of the above points.

Honestly, just get this (although its not stainless). You won't get a better performer now its thinned and sharpened by one of the UK's best. 10% off for temporary emails will get it down to £90.

No Le Hanh, 52100 San mai. Talked with https://www.instagram.com/zao_vietknives/ to sort out everything, top guy. Honestly, if all his work is like this its a sleeper. I use it commercially and its the best I've found although my AS Moritaka holds and edge better. I don't think its as such the steel or heat treatment, just how thin ground the Le Hanh is

I've have my ears at 35mm for 20 years and at a place in life where I don't have to conform to get a job as my reputation and CV does the leg work.
Dermel punches. Anyone had it done? Always though about two or three small ones in the top of my ear. 8mm, 6mm, 4mm. I did my sticky dots and it will fit.
