Ref punctures: Willing to jinx myself for this thread. I've ridden Veloflex tubs for 2x summers around Aberdeen/shire without a puncture. Keeping the tread clean inbetween rides and mainly riding on known routes (knowing where the potholes are) helped, but I did once clout a hole so hard it turned the bars but didn't flat, tyres run at 75-80psi.
I carry a little bottle of Stans sealant and a valve key with me in case I do flat. Not had to use it yet!

Availability is low these days. I've not ridden Vittoria Rallys, but the main benefit of tubs is the ride quality and rolling resistance - go for the nicest you can!
Second using tub tape, glue is more of a faff and also not easily available! Be sure to prep the rim bed too, clean it off with alcohol to make sure the glue/tape takes. Did not do this on a new pair of Light Bicycle rims and wasted a lot of time...
Maybe a bit counter-productive as you're already asking on this forum, but there are a few threads on Weight Weenies covering every possible question and permutation you could imagine.

For sale is my Cannondale CAAD3 in Viper Red with Saeco graphics on the TT. 58cm (C-T), 56cm TT. In very good condition for it's age, a dent on the TT that is shallow (tried to photo) and a few scratches which I covered with Tamiya red water-based paint (not a great match but serves a purpose). Small bubbling on NDS of head tube but that's it. Small mark to the fork lacquer. I painted the downtube stops and fork dropouts black (again using Tamiya modelling paint), easy to remove if you wish.
I bought this bike locally from FB Marketplace in December 2022. I stripped the original build, keeping the frameset, stem and seatclamp.
It's a great bike but one of many (one too many?) and I don't ride it enough to justify keeping it. Since putting it together I'd estimate it's covered 200km tops - I use it for 30km lunchtime blasts from work. Been caught in the rain on it once, otherwise dry miles.
Rebuilt with the following parts:
105 groupset (Chain Reaction deal): 11-30, 53/39 175mm (delusions of grandeur), KMC chain, Ultegra BB (as it's black to match). No drops or heel rubs. Only detraction is rubbing on the rear mech cage tab where I routed the chain over it between the jockey wheels (like a buffoon)Prime RR-50 wheels: Destickered with all the glue removed to save you doing it. Taped for tubeless, but run with Michelin latex tubes and Vittoria Open Pave GC 25s. Run with the Prime pads they came with.

Previously had a 130mm stem on this bike and it was far too long and had to admit defeat. Fitted a 110mm 25.4mm stem, but shot myself in the foot with some cheapo bars with insane reach! Found nirvana with 100mm Murex (ugly but removable plate), Speciale bars and a hardly used Ti Flite, very comfy.
Started needing to ferry a laptop around one day a week so fitted a light Tortec rack and borrowed a pannier bag back from a friend, fits the bill for both commuting and winter riding.

Turns out I have Q2 panniers and these won't fit. Get stung for a return so wanted to see if any takers here. 2 x 8mm, 2 x 10mm and 2 x 12mm inserts to suit 1x bag. £6 posted .

Some more detail of the TT ding, and the few scratches/marks that are present. BB shell is free of bubbling, just residual Park grease from installing the BB cups.
