Looking at these as far as retail go, anyone familiar with the brand? Says rim width 27mm, but optimised for 25mm tires, how does that work?

Selling my steel Specialized Langster, because it just doesn't get used. Super sweet bike, with lots of cool and lots of chrome. It is very lightly used, with minimal signs of wear and no scratches or chips to note. Some bits and finishing kit are brand new, and not used at all.
Frameset, Sugino crankset and shiny seatpost and shiny Alexrims wheelset all original and in good condition.
Bought brand new:
Unbranded (Campagnolo?) brake callipers from Condor
Zipp 90mm stem (fitted with quill adapter)
Believe the bars are Zipp too, can't remember (380mm fo sho)
Blingy TRP brake levers, drilled and shiny
Fizik bar tapeBike has a knock off Amazon Power saddle fitted, and I can chuck in some flat pedals if wanted.
Spent way too much on the shiny bits, so asking for the £450 I originally paid before I started to throw money at this. Collection only, in Hackney E9.

So I'm keen to build up a GT frameset I've picked up into some kind of gravel build. Think knobbly tires and tan walls and all that retro goodness, but with drop bars and brifter shifters.
Say I want a Deore groupset for the big range up back, but would I be able to pair this with any Shimano brifters? Could I pair some older 105 brifters with Deore derailleurs and then cantilever brakes?
Anyone with any valuable input?

Are the bars the short reach ones? Potentially interested in those, the pedals and maybe even the saddle. Also based East, will DM.

To be fair, the Mavics are available for not much more. Suppose Mavic is reasonably safe, and also good re warranty and such?
Appreciate the link and review, might just stay clear of the Zed.
