The guy measured my sit bones using this sort of thing (see pic). You sit on it and it leaves an imprint. The saddle that he recommended has a massive cut out. He didn't seem bothered about my hand-wringing when I said I wanted 'women-specific'. The BBB Echelon is unisex.
I want to try SMP but haven't got around to it yet. I might find a shop that does test saddles first if I find I have any new problems with my current crop of saddles.

Just putting this here in case it helps anyone else.
I've tried a few saddles now. I ride long distances - 10 hours in the saddle. Less padding is definitely better. I've had Selle Italia SLR on two bikes for years and found it really comfortable. I tried the Selle Italia Gel Flow but found that it had too much padding and rubbed. I've had Fizik Adrione Donna on another two bikes and found it really comfortable but last year I started to get lower back pain and went for a bike fit. The fitter measured my sit bones and recommended a BBB Echelon 155mm. I really like it and it feels comfortable (but looks ugly). I had to get used to the wider fit and it made my adductors ache until I was warmed up on the first few rides. Now feels good. I've kept that one on my Carbon bike.
I've swapped out a Fizik for a Specialized Power Expert 155mm on my Audax bike and love the Spesh. It feels great and really comfortable in the drops.
Hope all of this helps someone.
TL;DR get your sit bones measured

I’ve started with 700c wheels on my Kepler disc with SKS guards and then built 650b dynamo / Novatec wheels and put 650b GB guards on. The front clearance is tight and a bit fiddly but I’ve not had any problems so far. The wheel size feels agile and doesn’t feel slower than 700 so I’m keeping it like this. If I ever take it on an off road ride I’d take the guards off and possibly swap tyres if it’s wet. Hope that helps.

I've had bad luck. Rear IRC X-guard developed a lump and now in the bin after 300 miles of riding. I've also had Hutchinson All Seasons split wide open after 40 miles of riding and in bin.
I'm blaming @amey.
