Raymond was 230c for 30 mins then 150c for 35 mins or until the Goose was 55c. When I checked it after 30 mins ours was already over 70c.
It was by no means ruined and still tasty but was annoying given how far off the timings seemed to be. Ours was a pretty small bird and not a super meaty crown so maybe that played a role.

Goose turned out pretty good, confit legs were excellent and the gravy spot on. The crown was a little disappointing, followed Raymond Blanc's instructions but half way through the cooking time when I checked the internal temperature it was already above what I was looking for. Meant it was a little more done than I'd have liked. I confit the gizzards as well and they were great chopped up in the sprouts in lieu of bacon.

Cooking Goose at my in laws this Christmas and I'm looking for a little advice on how to cook it.
Recipes online seem split between taking off the legs and cooking them separately to the crown or roasting as a whole bird. I'm leaning to doing the legs separately.
As I'm at my in laws I'm without sous vide wand, temperature probe and have an unusual oven to contend with so will be reliant on timings, oven temperatures and touch.
Has anyone got a fool proof method they're up for sharing?

Snagged mirror version of the below saddle on Ebay so my old saddle is now up for sale.
It's the comp version with alloy rails in 155mm width. It's in good condition aside from paint missing from the saddle rails which is largely hidden when mounted. Looking for £35.

It was in great condition until a few weeks ago when I dropped it and cracked the top of the screen. It still works and it's been fine in the wet and dry I've tested it. Fortunately the crack is not on a part of the screen that you touch so it is cosmetic and does not affect use.
However, that being said I've knocked 50% off the price I was going to be listing it at.

The key thing with European purchases these days is finding a small retailer who doesn't properly understand the new rules. If you're lucky you can get shops that will exclude the VAT but let you place an order under the £135 threshold meaning it sails through UK customs. The bigger shops R2 bike etc have minimum order amounts (over £135) meaning you'll get picked up by UK Customs.
