Are you building this yourself or speccing it for PC Specialist or whoever to supply?
AMD pisses all over Intel right now in terms of performance/price/watt.
The two platforms you’ve selected are both ‘HEDT’, with extra PCIe lanes and memory channels above consumer platforms. Will you be using additional GPUs/NVME SSDs/capture cards etc in this machine in the future? If yes to any of those, then stick with HEDT. If not, then you may be better served with a consumer platform such as Ryzen 5 (based on newer Zen 3 cores and faster than Zen 2 based Threadripper Pro per core).
If you’re getting an off the shelf system, I’d delete any extra SSDs and go for the highest-end Nvidia GPU you can afford. It’s a nightmare getting hold of GPUs these days, and adding fast NVME storage after the fact is a piece of piss and relatively cheap.
