Bikes go for €10 on some TGV & Intercité trains, advance reservation required: Some high-speed TGV trains & some Intercité trains have special bike spaces and will take bikes for a fee of €10 if you book a bike space in advance. This includes some TGV-Atlantique (Paris-Brittany, Paris-Bordeaux-Biarritz-Lourdes), all Paris-Limoges-Cahors-Toulouse & Paris-Vichy-Clermont Ferrand Intercités, some TGV-Nord (Paris-Lille), some TGV-Est (Paris-Reims-Strasbourg). There are a maximum of 4 bike spaces per train, on the routes and trains that offer this feature.

Sounds good thanks. As far as I can tell you need to box your bike up for the Eurostar (and bring your own box) and use a bag or box for the TGV to Girona?

Yep, I'm travelling all boxed up with my own. There are different (more straightforward) bike rules for 'international' TGVs. It must be boxed, but doesn't need booking or extra €, as far as I understand, the trains have extra luggage space, you just stick it in there.
*Bringing your bicycle with you on international trains
International TGV trains*
Your bicycle must be folded or disassembled and stored in a bicycle bag no larger than 1.30 m x 0.90 m, then stored in a regular luggage area. Fully assembled bicycles are not allowed on international TGV trains.
