5mm in rake change will make the bike twitchier depending on your head tube angle. I did a 7mm change at one time and it was noticeable to me.
Are you 100% sure about your 300 crown to axle length? That seems very short. When I was fork shopping, I never saw any forks lower than 350mm. You may be correct though.
As for the length, an additional 67mm crown-to-axle length to your Parallax is will be a MAJOR change. Try to visualize that extra length and what it will do to the rest of the bike's geometry...unbolt the wheel and lift the bike/fork off the wheel's axle and hold it 3 or so inches above. Look at the change in top tube and head tube angles.
The Parallax has a tight geometry and that Enve road fork will only mess things up since it's such a drastic difference in specs.Now looking at the Leggera fork, it appears to have the exact same rake specs as your Parallax fork. Email them and ask about the crown to axle length.

Seems like an obvious choice. Plus you can get it painted any color you want.If not the Columbus, why not email Mash and ask them about ordering a replacement fork? I'm sure it's available.

Ok I was wrong
the length of the crown to axle is the same is 367-368.
300 is the length of the steerer tube.
Every site has this details so messy.
so the only difference is the rake -5+5

You should be good.
Your toe overlap will improve (lessen) a bit too.

I had a crash with my cinelli mash parallax 2015.
the fork is for change (has been moved out of the position, by 0.5 cm,)
The whole frame is just fine.

+lighter by 200-230 grams (almost 40%- down)
-bigger rake 40 < 35 (cinelli's columbus)
-longer crown to axle 367mm to 300mm (cinelli)
Is the difference on the crown to axle may be big?
I am ok with the rake..I believe will not change anything..
Next option a 3T rigida or Columbus Pista Leggera
