There's nothing your LBS will be able to do that you can't do yourself, unless your LBS employs a framebuilder.
Rivnuts... some people say they're fine, others say don't do it; however Google reveals several long-term successes and no failures. I would go for stainless steel rivnuts over aluminium ones due to corrosion issues, but then again, perhaps I don't understand how electrolytic corrosion works.

Looking inside the seat tube of my fancy new carbon bike shows me they use the same rivnuts as I use in my workshop. If it's good enough for LOOK it's good enough for us.
I have a setting tool if you'd like (me) to use it.

I have a bottle cage mount on the down tube of my steel frame, but one isn't enough for me and i'm getting bored of carrying bottles in my jerseys.
I didnt want to do the old Zipp tie/Clamp on mount quick fix - So I was wondering if anyone would be able to help me out
I've seen videos on youtube of people doing it
