Do you have home insurance that covers bike? You may be able to get them to counter claim.
If it's private land (ie Sainsbury's carpark rather than the street) I would write them a letter and ask for compensation to mend the bike then take them to small claims if they don't.
Lodge a police report and get the CCTV footage ASAP.
Did they complete an accident form?
I would think it's likely they should be reporting that to riddor, especially given the proximity to bike racks.
Also AFAIK Sainsbury's own most if not all of their mega stores, so the parking owner bit might not be true.
I could make a call and ask for a favour to verify if needs must ... ;)
