Nice. Looks very similar to that one I did, except mine was more like a 66. Will try again this week with your mixing technique, just spread the stir/kneads out more just to fit around work.
Anodised tins work well (don't wash them, just wipe!)
Also cast iron pan with lid gives good results.
I've done 50% and 100% before and I only had to adjust the amount of water a bit. With 100% wholemeal rye flour I used about 400ml.
This. Also just go with your current recipe and see if it works, then adjust as necessary. I usually bake with a wetter dough in tins as it’ll hold up anyway. Makes it moister and lasts an extra day or so

I didn't have any molasses or treacle so I used golden syrup instead. I didn't have any unsweetened chocolate, so I substituted cocoa. I also substituted espresso powder for instant coffee. Definitely include the caraway seeds though.
To be honest the recipe was really faffy, but it's justified by the end result.

Super wet and sticky dough, just flop it around the worktop with a plastic dough scraper until it starts to play ball, I don’t use all the water. Also I make three whoppers instead of six small ones and cook using the pizza skillet hob and grill method.
Been a while. Happy enough though. Not quite enough strength developed, but far from my worst.
Still crying with inferiority as I watch Tartine guy do the shaping on the Bon Appétit video.
