My name is Buffalo Dave (from zoobomb, Portland) but I now live in Gay Paris. I am having a hard time wrapping my head around the shortage of bike porn in this city. I s'pose folks don't see the point in having a nice bike as there are not too many safe places to stash them when not riding.
In any event, I will be visiting your lovely city June 30th to July 2nd. My only plans are to go on a Fat Tire bike ride (I work for Fat Tire in Paris) and to go see the Flaming Lips. I'd like to purchase a high quality, light, steel road bicycle while visiting because well, it's dang near impossible to find one here. I'm looking in the realm of Merckx or other higher end 70's or 80's craft frame. 55 to 56 cm. Steel. Merci!
I'd keep an eye on eBay.de and eBay.be. The UK is quite expensive for Italian bikes and Merckx.
Have you taken a look at www.leboncoin.fr there is a Dude in Paris who always has nice track bikes (velo piste) and there are some great bargains to be had if you keep looking.

Whoosh, that is tempting albeit a hair too large for me. Definitely a bike to inspect and ride in person. I will be in London from the 30th to the 2nd of July and would like to stay in touch!
