Trying to get the ph right in a sourdough starter with 00 flour for pizza is tricky. Ultimate first world problem etc.

I can't get enough of it. My wife keeps going back to the Cour Blimey. It's all good, though. Feel spoilt to have pizza that good so readily available.

Those type vent through the front door when you have the fire going. Then you rake out the fire, put the food in, plug up the door and the latent heat cooks the food.
I didn't think that would work either, but apparently it does!

Some recent efforts.
Tried a few different dough recipes - all from Flour Water Salt Yeast. I think the white loaf with biga has been my favourite so far.
Just cooked in the oven with a pizza stone.
Gonna make an oven in the garden soon I think though.

my plan is to lay some firebricks, then do the hugh/rivercottage method of building up a dome with a wee vent.
that should work? is there a good online supplier I can just buy materials from that won't cost a fortune to ship?
I don't really want to have to build a door...

Dough is Metrocamel's recommendation... something like 450g flour, 1.5g yeast, 300ml water, 14g salt.
That plus my secret ingredient.
Pan wise, cheap frying pan, heavy and shit but hot as hell... -

seen it done with cast iron but my cast iron is small and in serious need of some tlc.
