There’s a guy on the same estate as pier city who does it, but I believe he’s a bit of a dickhead. Seems busy enough though, as people constantly show up at PCC with no idea how to find the workshop they’re looking for

I stitched and stapled covers before. Make sure the staples are the right size and your staple gun is up to the task.
Add foam if you feel like it but it will stiffen the seat and make the cover bulge or not fit depending on thickness and overhand. Mileage varies

I can vouch for the lomo motorcycle drybag, its about 40l and comes with loops that you can use rokstraps/altas straps to secure it down. If you pack smart its plenty big enough for a short trip.
I reckon you might even be able to combo it with a kreiga if you tried.
Used that setup on a 1000km trip through Nepal to the Tibetan border last year and never failed me. Bonus points for being about £15 if I recall! My mate used the panniers by Lomo and although they were decent, were a bit of a faff taking on and off the bike.
I've never really got on with side panniers on my Thruxton 900, it seems to make the bike really wallow through turns. I have a set of those pannier rails to fit air cooled Triumphs that I'd happily post to you if you want to borrow them for the trip?
