If you just want a strong wheel, 36h built well is more than adequate. Rim wise I can reccommend DT swiss for being both strong and light. Their deeper ones only come in 32 though.
Also dont forget you can use 29er rims too which are built for thrashing and also have the trend factor of non brake surface.
Hub wise Id go for something with a thru-axle.

Looking for suggestions\ideas\recommendations on how to get my hands on a *truly *bulletproof rear wheel?
nothing fancy - just a rock solid wheel that will take some beating from its 110 kg rider and London roads.

I'm 105kg and riding quite happily on open pros laced to a miche primato on the back and a formula on the front. Seriously, it's all in the spokes and the build - get a wheel built well with decent spokes and it'll be strong enough easily.
