Think the case finish is a matter of taste to be honest, whereas a shiny dial/bezel/hands present more of an issue legibility wise. I wouldn’t worry about it too much.
Personally I’m not a big fan of the fully polished version, but it does give a bit of a 70s vibe if you like that sort of thing, especially on the Milanese bracelet they offer.
I’m very much into the NATO strap and never into metal strap so a matt finish work for me.
Also later learnt that a matt finish is typical for a diver, so there’s that.
Ed, if you’re interested, I could do you for a 1521 way cheaper than P&C. It’s the standard black polished, and pre the « Squale » inscription on the case. I can’t load images here but could email. Boxed and with a guarantee card.

Love the bead blasted squale. Every time you post it the watch goes back on my list. The only thing that stops me is that I really want a watch that looks like the squale but has an eco drive movt. Or similar. A grab and go tough diver.
