Rear the rear mech. If you're on a budget and everything you're using is 10 speed, I'd stick with the 105 rear mech. You've got nice shifters and brakes and they're the important bit.
The wheelset sounds nice, but again if money is a question I think you'd be much better off with Tiagra hubs and BHS C472w / XC279. They give you the width for less weight and should be stiffer.
